We are going there at that time as well. We've been to Florida before and camped in the Everglades and that was fantastic. I think there is a lot to do depending on what you like. We plan on renting a boat to snorkel, going to Dry Tortugas, renting kayaks, Key West is a great day trip, and eating a lot of seafood!
We sail there from Jacksonville every few years. It's a blast! The Hemmingway house (with lots of 6-toed cats), the bars he frequented, the sunset craziness on the waterfront, some shopping, water skis, and, yes, take in a sunset seafood dinner on the west side of any of the Islands - there's a great one in Islamorada!
We spent a few days at the Playa Largo in Nov. 2017 and it was beautiful. If you are a scuba diver, there is an underwater national park in Kay Largo and an underwater hotel as well. I've been to Key West a few times and it is a lot of fun - lots to see and do. I have not been to Dry Tortugas, but would like to on my next visit. When we were there last year they were just recovering from Hurricane Irma, I believe by now mostly everything will be up and running. There is a great resort for families on Duck Key called Hawks Cay Resort - we have friends that have stayed there a few times and raved about it.
It has been a few years, but there was a fantastic seafood restaurant in Islamorada, which is 1/2 way between Key West and the mainland. Great stone crab! If it's still there, it's definitely worth looking forward to. Every night all the tourists and some of the locals gather at the west end of the island to watch the sunset. It's very pretty....

We must have hit the same restaurant...it has a big outdoor deck on the waterfront with unobstructed views of the sunset? And fabulous seafood! Our first time there I tried coconut shrimp for the first time (probably 25 years ago now) and they were colossal, succulent and perfectly cooked! I'm not a big foodie, so I only rave about a handful of places...this is one of them!
It may be the Islamorada Fish Company. We ate there and it has a large patio and a view of the sunset. It is right next to a Bass Pro Shop if that's the one they are referring to. I would also recommend a restaurant called Lazy Days. Not the fanciest place around, but the food was very good with beautiful water views. It's the kind of place where you can bring the fish you caught and they will cook it for you (we didn't do that!).
