Can't go wrong with an ocean cruise on Celebrity or Royal Caribbean!
It always depends how far you would like to go. I am originally from Switzerland and loved doing the Eurorail tours. This means you can get a train ticket for a week or two and travel around Europe. This is a one time cost for you and you can just hope on trains and go to a different city once you are done with the city you are in. Here is the link: https://www.eurail.com/en
This is a very convenient way to travel.
If you don't want to go that far, I really liked canoeing in the boundary waters or hiking in Estes Park in Colorado.
French Polynesia! For my 25th wedding anniversary we went on a 7 day cruise and then back to Bora Bora. It was amazing!
It's a toss up between a month in France and a month in Australia.
1. France – Get an apartment in Paris for the entire month. Visit all of the local sites/museums/tours that interest you. (I have a list of links organized by arrondissement.) Stroll the streets, eat at cafes. Make sure to take a boat tour down the Seine during the day and evening/night! Plan a day trip to Versailes – do the bike tour; take a hot air balloon ride over the Loire Valley; go to Anncey in the spring to see the French Alps; go to Cannes or Nice for the French Riviera; drink Bordeaux in Bordeaux and Champagne in Champagne, shop like the locals and enjoy the city of lights! 2. Australia – a month here, too, but move from city to city. Fly into Sydney and plan to stay 8-10 days…there's SO much to do! Don't miss an overnight stay at the Zoo and a play at the Opera House. Fly to Melborne and take the Great Ocean Road tour (includes a rain forest hike). Cairns offers the Great Barrier Reef, of course, but take a bus up into the mountains where the Aborigines live. In Brisbane you can then take a boat tour to the zoo to hold a koala (the only place in the world where you can). Most of all, talk to the Australians wherever you go – they are very friendly and fun to listen to!
My wife and I went to the Outer Banks in North Carolina this year. This was the first time we weren't anxious to go home by the end of the vacation. We wanted to stay. We stayed at a beachfront resort in Duck, N.C. Every day we walked several miles on the beach. We kayaked with alligators, swam in the ocean, visited several lighthouses and the Wright Brother Memorial. Ate great barbeque meals. Saw black bears in the wetlands, flew kites on the beach, etc. We went in May before the main tourist season and things got too crowded. Early Fall is also a good time to go. Very family friendly.

I'll share my best vacation spot, too! We absolutely love Puerto Vallarta and the surrounding areas. For us, it feels less touristy than other destinations in Mexico and it's very warm and welcoming. All the wonderful memories from our time there make it a definite repeater!
We stayed in Bora Bora for a week in an over the water hut. It was paradise! It's very expensive but worth it in my opinion, something my husband and I will always treasure.
I hear they have those over the water huts in the Caribbean now!
1. Scottish Highlands! Flew into Edinburgh Scotland and stayed for a few days (amazing and welcoming city) and then took a Rabbies 2 Day Bus Tour of the Highlands. This was the most amazing trip I have ever taken. Could not recommend enough!
2. Munich Germany is also fantastic. Spent a few days touring the city which is very neat with lots of parks and excellent food. Then we spent a day at the Zugspitze (Germany's highest peak in the alps).
Most beautiful – Lakes District in Chile (go in our Winter/their summer). Very interesting – Cuba (not exactly frozen in time, but felt culturally suppressed). Best domestic – Bandon, Oregon (dramatic rocky beach with whale watching).
Iceland was incredible.
