Gardeners Unite!
As Spring is (finally) approaching, my thoughts turn more and more to digging in the dirt. Every single year I say I'm going to scale back on my vegetable garden, and every single year I find myself with more veggies than I know what to do with. Does anyone else have the same dilemma? What do you do when you have more veggies than you can eat on any given day during the summer? I've canned, frozen, processed until I have no more room. I need fresh ideas! Also, good recipes for summer's bumper crop would be fun too!

I know it can be time consuming, but what about selling your wonderful produce at a local farmer's market?
Consider donating extras to Channel One, they will accept many veggies.
Brenda, my over abundance is usually too sporadic to be reliable for "bringing to market", not to mention that getting that all set up would be the most time-consuming part. It would be fun, but maybe more for when I retire or have all that wonderful time on my hands.
Erik, that's a good thought. I could contact them about what they can or cannot take. I always thought they would need to adhere to some strict guidelines regarding where they got food from, particularly when it isn't pre-packaged. Thanks for the suggestion.

We have the same problem, freeze a lot, dehydrate a lot, can a lot and still plenty of extra!

OH WOW, I wish I had your problem. I live in Florida and attempted a few times to have a salad garden (tomatoes, salad green, onions), but between the birds, squirrels and heat, I gave up. I am a fan of juicing and have found that the juicing process uses a lot of vegetables.
Any tips for container gardens in MN? I've not tried this before, and haven't started looking into it. Our deck gets full/direct sun and is south facing. I was thinking of planting just a few herbs and vegetables.
